Brown Flour Soup(Braune Mehlsuppee)

1/4 cup butter
1/2 cup flour
5 cups soup stock
salt,pepper, and grated cheese

Melt the butter in a sauce pot, blend in the flour. Heat until the mixture bubbles. Remove from heat and add the cooled stock slowly. stirring constantly to prevent lumping. When well blended, add salt and pepper to taste. Cover and cook over low heat for 20 minutes. When serving, sprinkle each bowlful with grated cheese. 6 servings.
