Bulk Scrapple
List of Ingredients
Per 100 lbs scrapple
25 lbs. buckwheat flour
5 lbs. salt
4 lbs white pepper
9 pork livers
35 asst. pig meat scraps
10 lbs. pork grease or you can use veg. shortening
maple extract to taste
Cook and grind livers and meat scraps
To 10 gal. boiling water, add 1/2 of the grease, and ground meat. Stir in
spices. Add buckwheat 15 lbs. at a time. let it cook and stir well. Should
have consistency of mush. Add remaining pork grease while adding buckwheat.
Spoon into containers and allow to cool. Mixture will be very hot.
