    Favorite Recipes from the Standholders of the Nation's Oldest Farmer's Market, Central Market in Lancaster, Pennsylvania By Phyllis Pellman Good and Louise Stoltzfus

    Pie Ingredients:
    2 tablespoons butter
    2 cups milk
    2 egg yolks
    1/3 cup flour
    1/8 teaspoon salt
    1 cup brown sugar, firmly packed
    1/2 teaspoon vanilla
    1 9" baked pie shell

    Topping Ingredients:
    2 egg whites
    2 tablespoons sugar
    pinch of cream of tartar

    1. Melt butter in saucepan. Add all other pie ingredients and bring to
    a boil, stirring constantly. Continuing stirring until mixture thickens.
    Pour into baked pie shell. Cool.

    2. Beat egg whites to peaks. Add sugar and cream of tartar. Spread
    meringue over pie and put into oven to brown.
