Chicken Stoltzfus
List of Ingredients
Chicken Stoltzfus which is to "die for." You cook
your chicken just like you were making soup. Cool and debone. Strain
the broth. Put 12 Tbls butter in the pan used to cook chicken. Mix in
12 Tbls flour. Cook over med-low heat til golden and bubbling. Add 4
cups broth and 1 cup light cream or ½ cup milk and ½ cup evaporated milk
Stir constantly and cook , med-low, until thick. Add chicken and some
parsley. Serve hot over pastry squares.
1/2 cup vegetable shortening
1/2 cup butter
3 cups all-purpose flour
1 teas. salt
about ½ cup ice water
Mix just like pie crust using just enough water to hold dough together.
Divide into 3 parts. Roll each part 1/8 " thick to fit on an ungreased
cookie sheet. On the sheet cut dough into 1" squares. Bake, 350
degrees, 12-15 minutes or until lightly browned. Put squares on platter
and add chicken. ENJOY.Recipe
