    Corn Pie

    List of Ingredients




    1 doz. ears corn or a 16 oz.bag of frozen corn
    3 potatoes
    1/2 cup celery - chopped fine
    3 hard boiled eggs - chopped
    1 to 1 l/2 cups milk
    4 T. butter
    1 1/1 tsp. salt
    1/2 tsp. pepper
    Pie dough for a 2 crust pie

    Cook corn in boiling water about 8 minutes. Cut cooked corn off cob. Peel potatoes. Cut in small pieces and cook. Near end of cooking time for potatoes, add celery and cook 5 - 10 minutes more. Drain water thoroughly. Put all these ingredients + chopped hard-boiled eggs, salt & pepper in a large bowl. Stir and mix together thoroughly.

    Spoon mixture into a pie crust in a large deep dish pie pan. Melt butter & stir into slightly scalded milk in a glass measurig cup. Pour over ingredients in pie pan, enough to cover all ingred.but keep level of milk at least 1/2 inch below top of pan. Save rest of butter/ milk mix in glass measuring cup.
    Bake on a cookie sheet at 375º for 35-45 minutes. Remove from oven and wait 5 to 10 minutes before cutting. Pour saved milk/butter mix over servings if needed.
