Cottage Pudding [cake]
List of Ingredients
2 1/2 cups sifted flour,
4 teaspoons baking powder,
1/4 teaspoon salt,
1/2 cup butter,
1 teaspoon vanilla extract,
1 cup sugar,
1 egg, well beaten
1 cup milk
Sift the flour, baking powder, and salt together; set aside. Cream the butter and extract until butter is softened. Add the sugar gradually, creaming until
fluffy.
Add the egg in halves, beating well after each addition. Alternately add the dry ingredients in fourths and the milk in thirds to the creamed mixture, mixing until just blended after each addition. Turn batter into a well-greased (bottom only) 9x9x2 in pan. Bake at 350 degrees F about 30 min. or until cake test done. Cool slightly in pan on cooling rack. Cut into 3 in. squares and serve with Pudding
sauce.

2 tablespoons flour,
2 cups boiling water,
2 tablespoons butter,
1 teaspoon vanilla extract
Mix together in a saucepan the sugar and flour. Add the boiling water gradually, stirring constantly. Continue to stir, bring to boiling, and simmer 5 min. Remove
from heat and blend in the butter and extract

I love the cottage pudding and use it for my pineapple upsidedown cake always. Do not make/use sauce for upside down cake.
