    Dutch Sour Jerusalems
    10 Jerusalem Artichokes
    tablespoon butter
    1 cup vinegar
    salt, pepper, cayenne


    Boil the artichokes for 40 minutes in salted water, rinse in cold water, and let cool. Dice and pour over them the vinegar sauce mixture.
