    List of Ingredients




    1-1/4 c. milk
    3 eggs, beaten
    1/4-c. shortening
    3/4-c. sugar
    1-tsp salt
    1/4-tsp nutmeg
    1 small yeast cake
    4-1/5 to 5 c. sifted flour

    Scald milk, add shortening & salt. Cool mixture until lukewarm; add crumbled
    yeast cake and stir. Gradually add 2-2/3 c. flour, beating batter thoroughly.
    put in warm place and allow to stand until full of bubbles.
    Mix sugar with nutmeg and combine with beaten eggs. Stir this into first mixture and add remaining flour.
    Knead well, cover and let rise in warm place about 1 hour.
    Turn out on floured board & roll to about 3/4-inch thick. Cut with donut or biscuit cutter. Shape into ball or make into twists.

    Cover with thin cloth and let rise on board until top is springy to touch. Drop into hot fat (375-degrees) with the raised side down, so the top side will rise so underside cooks. Drain on absorbant paper.
    Yield abt 3 dz.

    You may wish to shake in bag of either granulated or 10x (powdered) sugar before setting out on absorbant paper. They really need to be eaten fresh -day-old doesn't cut it.
