    Ginger Cookies

    List of Ingredients





    2 cups shortening melted
    2 tablespoons baking soda
    3 cups sorghum molasses
    1 tablespoon ginger
    1 cup sugar
    1 teaspoon cinnamon
    1 teaspoon salt
    8 to 10 cups flour
    1-1/2 cups buttermilk or sour milk

    Heat sugar and molasses together. When sugar is dissolved, add the shortening, stirring until it is melted. Remove from heat and cool to lukewarm. Add dry ingredients alternately with the milk. Stir until a medium soft dough is formed. Knead on a board for about 5 minutes.

    Chill dough for several hours or overnight. Turn dough on a lightly floured board and roll out ¼ inch thick. Cut with a large round cookie cutter. With a pastry brush, glaze with a beaten egg brushing lightly. Sprinkle sugar on top if desired. Place 1-1/2 inches apart on a greased cookie sheet.

    Bake at 350° for about 20 minutes.

    Makes 8 dozen.
