Gooseberry Pie
List of Ingredients
Gooseberry Pie -
1 qt. gooseberries, stems removed and washed
1 and 1/2 cups granulated sugar
1/4 cup brown sugar
2 tablespoons minute tapioca
Touch of salt
1/4 teaspoon grated nutmeg
Crush 1 cup of berries with potato masher. Add sugars, tapioca, salt
and nutmeg. Cook over med. heat until bubbly - about 4 min. Lower
heat and simmer another 2 minutes. Add rest of berries and allow the
mixture to cool five minutes, then pour into unbaked pieshell. Dot
with 2 tablesoons of butter. Cover with top crust which has been cut
with a few slits. Bake at 350 degrees for i hour or until juice
bubbles up thru slits.
