    Hinkel Welschkarn Suup Chicken Corn Soup

    List of Ingredients




    This is a recipe that is a favorite from the Hotel Brunswick in Lancaster, PA.


    1 quart chicken stock
    2 pieces (stalks) celery
    2 hard-cooked eggs (diced)
    1 medium-size onion
    1 #2 can of corn (or 4 cups of fresh corn)
    2 medium-size potatoes
    diced cooked chicken for garnish

    Heat chicken stock, add salt and season to taste. Add celery, onion, potators (and corn if you use fresh corn). Cook until vegetables are soft. Add chicken and diced eggs (and canned corn, if used). Makes 8 servings.
