    Hog Maw or Pig's Stomach

    1 Pig's Stomach
    1 to 2 pounds of loose sausage
    several potatoes (depending on size of stomach)
    1 medium onion
    salt & pepper to taste

    Rinse out pig's stomach and drain. Simply peel potatoes and dice up, chop
    onion, and mix potatoes, loose sausage and onion together. Add a little
    pepper and salt to taste. Stuff mixture into pig's stomach. Place in
    casserole dish and cover and bake at 350 degrees for approximately 1 1/2
    hours. I like to take the cover off for the last 15 -20 minutes to let it
    brown a little.

    Personally, I do not like the stomach itself, but can never get enough of the
    stuffing (mixture) that is inside of the stomach! My husband (and most of my
    relatives) enjoy "fighting" over the stomach part!!

    Since we tend to eat this quite regularly, I often make up several at one
    time and bake them for about 1 hour, let them cool and then place them in the
    freezer. Once thawed out, they can be made rather quickly by baking them for
    about 1/2 to 3/4 hours.

    You will probably NOT find pig's stomach in the grocery store or super
    market. They are available at most all butcher shops or meat stands at local
    farmer's market, though.
