Howard's Bacon Dressing for dandelion

Bacon Dressing for dandelion or endive
Fry 6 slices of bacon until crisp. Remove from pan.
Pour some of the grease from pan saving about 3 Tbs.
Add 1/2 cup of water to pan and simmer to loosen any brown bacon bits from
the pan, meanwhile in a pint jar (a pint jar is what I use) put 1/2 cup of
water, 1/3 cup of vinegar, 1/4 to 1/3 cup of sugar depending on your sweet
tooth, 2 Tbs. of flour and one large egg.
Shake in the jar until well blended.
Add this to the pan with the simmering water and cook together for two
minutes stirring as it thickens. Season with salt and pepper. Add bacon
bits, (that were previously crumbled), to a bowl containing 2 qts. of
greens. Pour hot sauce over all. Mix and stir.
This recipe makes enough sauce for 2 qts. of greens.
