Lebkuchen cookies
List of Ingredients
2 2/3 cups brown sugar;
1 1/2 cups shortening;
2 eggs;
2 cups molasses;
2cups cold coffee;
1/2 cup of grape juice,
wine,whiskey or rum;
1 1/2 teaspoons nutmeg
1 1/2 tsp allspice,
1 1/2 tsp cinnamon,
1 1/2 tsp cloves;
salt to taste;
2 1/2 teaspoons baking soda;
2 cups nutmeats(a mixture of pecans,black & english walnuts is nice);
1/2 lb. currants;
3 cups raisins (white or dark);
1 lb. candied mixed fruit(chopped fine).
Add enough white flour to make a stiff dough, but only stiff enough to roll out. Dough should be a bit soft or cookies will be too dry when baked. Cover tightly and refrigerate several days. On a heavely floured board roll a small amount of dough to 3/8 inch thickness. Cut dough in rounds, about 2 1/2 inches round, with cutter. Grease cookie sheet and bake 375-400 degrees 10-12 minutes or until set. When thoroughly cooled pack in an airtight container. I like to soak a clean dish towel in wine or grape juice or brandy, wring it out tight , line the cookie
container with the cloth and wrap the cookies in it. They stay moist a long time that way. They are better
if made 2-3 weeks in advance. This is an old recipe. Recipe
