Milk Pie and History of

Milk pie was considered a "children's" pie, not good enough for company! It
was usually made with any left over pie crust, and so the size of the pie
would vary. However, here is the recipe for a whole milk pie.
4 Tablespoons flour
4 Tablespoons Sugar
1 1/2 Cups mild or cream
dash of cinnamon
Pastry Shell, unbaked
Combing the flour and sugar, mixing well. Put into unbaked shell. Pour milk
or cream over mixture and sprinkle with cinnamon (Top milk was always used
for this tart before homogenized milk came into use). Bake in 350 degree oven
for 45 minutes. Pie will be runny. For the few who like it thicker, use less
milk or let the pie set a day before eating it.
Some added a tablespoon of molasses or substitute brown sugar for the
white, calling it; Candy Pie, Goody Pie, Love Pie, or Butterscotch Pie.
Other names for Milk Pie are; Poor Man's Pie, Cream Tart, Promise Pie,
Eat-me-Quick Pie, Grandmother's Pie, Nothing Pie, Everyday Pie, Johnny Pie,
Sugar Pie, Mennonite Pie, and Milich Tart.
Some Pa. Dutch dialect names are: Milich Flabies, and Milich SchabbiesRecipe
