OH Amish Dried Corn Pudding
List of Ingredients
Grease a 1&1/2 qt. ovenproof casserole dish lightly with butter.
LIGHTLY heat (wrong about scalding!) 2 cups of milk. Put 1 cup of
dried corn to soak in milk for two hours.
Preheat oven to 350 degrees F.
Lightly beat 4 whole eggs; add one more cup milk, 2 tablespoons of
sugar and 1 teaspoon of salt to corn/milk mixture. Add beaten eggs,
mixing all together well. ( Sometimes I add 1&1/2 teaspoons of dried red
peppers if my guests are used to spicy food.)
Pour into greased casserole and bake in 350 deg. F oven for about an
hour or until set (like a custard) If you are using a pumpkin, baking
time will be longer and will vary depending upon the thickness of the
pumpkin shell.
