    Oyster Pie

    List of Ingredients




    4 cups of potatoes, cooked and cubed
    1/4 cup of celery, chopped
    1 pint of oysters with liquid
    2 eggs, hardboiled and chopped
    1 teaspoon of salt
    1/4 teaspoon of pepper
    2 tablespoons of butter
    1 1/2 cups of milk
    Crust:
    1 1/2 cups of all-purpose flour
    1/2 teaspoon of salt
    1/2 cup plus 2 tablespoons of shortening
    1 egg beaten
    2 tablespoons of cold water
    1/2 teaspoons of vinegar

    Recipe



    Alternate layers of potatoes, celery, oysters, egg, and seasoning in baking dish
    Dot with butter
    Pour milk and oyster liquid over layers

    Mix flour and salt
    Cut in shortening
    Combine egg, water and vinegar and stir into shortening
    Refrigerate for a few minutes
    Roll out dough on a floured board
    Place crust over oyster mixture
    Cut slits in the dough to permit steam to escape
    Bake at 375 degrees for 45 minutes
