    Pancakes and Liver Filling/Gravy

    List of Ingredients




    Pancakes: 1/2 lb flour, pinch of salt, 1/2 c. milk, 1 c. club soda,
    mix until smooth. Add 4 eggs, beat with wire whisk, briefly. Let stand
    about 1 hour. Heat up butter, coat pan well. Coat the pan with pancake
    batter. Tilt the pan for an even distribution. Its like a crepe.

    Liver filling: 1 lb. calves liver. Soak in milk for 1 hour. Wash them
    quickly. Remove the skin. Cut in thin slices (strips). Cook 1 large onion
    finely chopped in 3 Tablespoons of butter until light golden. Add liver
    turning it to brown on all sides. About 5 minutes.

    Now we fill the pancakes with this. You can add some wine to this to
    make a gravy.
