    Potato Bread

    List of Ingredients




    1 medium size potato
    1 quart of water
    2 tablespoons butter
    3 teaspoons salt
    2 packages dry yeast
    1 teaspoon sugar
    1 cup warm water
    11 to 12 cups all-purpose flour

    Recipe



    Cook the diced, peeled potato in the quart of water until tender
    Drain the potato, reserving the water
    Mash the potato until there are no lumps
    Add the mashed potato to the reserved water and stir in the butter and salt
    Let mixture cool until lukewarm
    Dissolve the yeast and sugar in 1 cup of warm water
    Allow it to stand for 5 to 10 minutes
    Gradually add 6 cups of flour to the potato water, beating it until it is smooth
    Mix in the dissolved yeast and sugar mixture
    Mix thoroughly
    Cover and let the dough rise in a warm place for 2 hours
    Work in enough of the remaining flour to make a soft dough
    On a flat surface, knead the dough until it is smooth and satiny
    Place the dough into a greased bowl and lightly grease the top of the dough
    Cover and let the dough rise until double in size
    Punch dough down and divide into 3 loaves
    Place each loaf in a greased bread pan
    Cover and let dough rise until double in size (about 30 or 40 minutes)
    Bake loaves at 375 degrees for 40 minutes, or until loaves are a golden brown.
