Raisin Pie

RAISIN PIE
1 cup raisins
2 cups water
¾ cup sugar
1 tablespoon lemon juice
4 tablespoons Clear Jell or corn starch*
3 tablespoons water
Directions:
In one-quart saucepan, put together, raisins, sugar, 2 cups water, and lemon juice. Bring to a boil. Reduce heat to low. Mix Clear Jell, and 3 tablespoons water add to boiling mixture in a slow stream, stirring constantly. Cover and cook on low for a few minutes. Pour into unbaked pie shell, cover with either lattice top, or full top, brush with a little milk and sprinkle a little sugar on top and bake at 400° for 10 minutes. Lower temperature to 350° and bake for an additional 30 minutes or until golden brown.
NOTE: Use this basic recipe for other fruit pies. Cherry, blueberry, ground cherry, and peach. Use 1 cup sugar, and add food color if desired.
*Tip: Clear Jell will stay clear after it gets cold, and will stay the same consistency after it cool. It also reheats better, and can be made ahead of time; whereas corn starch will be slightly cloudy, and become a little thicker when cold, and needs to be baked while still warm.
