Red Cabbage with Apples
1 head red cabbage, about 2-1/2 lbs.
3/4 cup boiling water
3 large cooking apples, peeled, cored, and sliced
Dash of pepper
3 tbs. butter, melted
1/4 cup cider vinegar
1-1/2 tsp. all-purpose flour
1/4 cup firmly packed brown sugar
2 tsp. salt
Wash and shred cabbage very fine. Discard core and tough ribs. Add boiling water and cook 12-15 minutes. Just before cabbage is done, add apples and simmer 10 minutes longer. Then add remaining ingredients, Toss lightly with
fork to blend, Heat gently and serve. Makes 6 servings.
