Rice Pudding
List of Ingredients
4 tblsp white long grain rice
1 quart milk
4 eggs
1/2 tsp salt
1 tsp vanilla exract
1/2 cup white sugar
2 tblsp butter, melted
1/2 cup raisins [opt]
Cinnamon and nutmeg to taste
Cook rice in a heavy saucepan with half of the milk until tender. Combine beaten eggs, salt, vanilla, sugar, butter, raisins, spices and the remaining milk. Pour into a buttered 2 quart casserole dish. Bake in a preheated 350 degree oven for 45 minutes, or until set. Makes 5 servings.
