SCALLOPED DRIED CORN
(Serves 6)
3 cups coarsely crushed crispy crackers
1 teaspoon salt
1/8 teaspoon pepper
3 tablespoons butter
1 can ready-to-eat dried corn
2 cups milk
Into a 2-quart buttered baking dish (with cover) put 1 cup of the
crushed crackers. Sprinkle over these 1/2 teasoon of salt and dash of
pepper. Dot with 1 tablespoon butter. Cover with half the corn and
another cup of crackers. Add remaining corn and seasonings. Cover with
the last cup of crackers.
Pour milk over the whole and dot with remaining butter. Cover casserole
and bake in a 375 degree oven for 35 minutes. Uncover and bake 10
minutes longer.
