    SPECK UND BONO

    3 lbs. smoked ham
    1 qt. beans, washed and broken into 1-in. pieces
    6 medium-size potatoes, washed, pared, and quartered
    1 to 2 teaspoons salt
    1/2 teaspoon pepper.

    Cover ham with cold water and simmer 2-1/2 hrs. If necessary, add water during
    cooking to keep at least 1 qt. of broth at all times. Add the beans and
    continue cooking aout 25 min. Add the potatoes and cook about 25 min., or
    until the vegatebales are tender. Season; serve hot, accompanying with cider
    vinegar for those who like the dish strongly flavored. 6 servings.
