Sour Cream Raisin Pie

Sour Cream Raisin Pie
1-1/2 cups raisins
1 teaspoon vinegar > cook the above two ingredients in enough water to
cover raisins until raisins are tender & plump. Remove from heat.
Slowly stir in 1 cup sour cream.

Mix together: 1/2 cup sugar, 1 Tablespoon Corn Starch and dash of
salt.
Make a paste of this mixture from some of raisin mixture liquid. Let
this mixture cool slightly and then stir in 2 egg yolks. Return to stove
and cook over medium heat until thickened, stirring constantly. Poor into
8" baked pie crust. Use egg whites to make a traditional meringue for top
of pie. Brown meringue in oven. Chill before serving. This recipe
makes raisin cream filling that is slightly tart while still remaining
sweet.
