Stuffed Pig's Stomach

We eat this all the time. Make sure you buy a cleaned pig stomach. I've
already purchased it uncleaned. (did not know it) and I didn't know how to
clean it. Had to take it to my grandmothers to get cleaned.
All we do is fry bread cubes in butter. Then we mix bread cubes, cubed
potatoes, sliced up sausage, smoked and regular, chopped onions and
parsley. Stuff this in to the stomach. Sew up the stomach. Prick the
stomach, so it doesn't blow up while baking. Bake at 350. I'd say about 2
hrs. later check it. You can tell it's done when you prick the potatoes
and they feel done. The stomach should be browned. If using a small
roasting pan put about 1 inch of water in pan. Large roasting pan 2
inches. It depends on how big your pig's stomach is. I can't tell you
how much goes in it, any extra stuffing we just bake on the side.

I can tell you this recipe is very good. I don't eat the stomach itself
but I love the stuffing.
