Tomato Fritters
List of Ingredients
2 cups cooked tomatoes
1/2 tsp. salt
2 eggs
1/8 tsp. pepper
1 1/2 cups cracker crumbs
1 1/2 tsp. sugar
1 small onion minced
3 tbls. fat
Beat eggs and add tomatoes, seasoning and cracker crumbs.
Stir until well-blended.
Drop mixture from a spoon into fat.
Fry until brown on both sides. Serves 6
