Vegetable Beef Soup

List of Ingredients




1 beef soup bone (with plenty of meat on it, or use 3 pounds of boiling beef)
1 1/2 teaspoons of salt
2 quarts of water
2 cups of potatoes, peeled and diced
2 cups of carrots, sliced
1 cup of celery, chopped
1 cup of cabbage, shredded
2 cups of peas
2 cups of green beans
2 cups of whole corn
2 cups of tomatoes or tomato juice
1/2 cup of rice


Recipe



Cook soup bone or a piece of boiling beef and salt in water until meat is tender
Cut meat into small pieces and set aside
Add potatoes, carrots, celery, and cabbage to broth
Cook until vegetables are tender
Add remaining ingredients and cook until vegetables are soft
Stir in meat and serve
