green tomato pie
List of Ingredients
green tomato pie recipe prepared the way my husband's mother made
them. My own mother did not make these, but she did fry sliced green
tomatoes to use them up.
Wash and slice without peeling enough green tomatoes to make 1 quart.
Pour boiling water over the slices and let stand at least 5 minutes.
Drain and set aside.
Line a deep 9 inch pan with pastry.
Fill with layers of tomato slices, each layer sprinkled with a little of a
mixture of 1 cup of sugar and 3 tablespoons of flour.
Dot each layer with a little margarine.
Sprinkle with cinnamon. (I add this to my mixture of sugar & flour)
A tablespoon or so of lemon juice can be sprinkled over pie.
Cover top with narrow strips of pastry or with a whole top.
Bake 450 degrees of 10 minutes; reduce to 375 degrees for about 40 minutes.
