    Fettuccine al "Skinny"

    List of Ingredients




    Fettuccine al "Skinny"
    1/4 lb. fettuccine noodles (if you want an extra pretty plate, use spinach fettuccine)
    1 1/4 cups ricotta or cottage cheese, low fat
    1/4 cup Parmesan cheese, grated
    1/4 cup plain yogurt
    1/4 cup fresh parsley, if dried use about 1/8 cup
    2 cups fresh spinach leaves, this is optional
    Salt and Pepper to taste
    Garnish: chopped black olives are terrific with this or fresh basil

    Cook pasta in big pot. Put cheeses, yogurt, parsley and spinach in food processor and blend until smooth. After pasta is done cooking, drain it and toss with sauce. Garnish with black olives and serve immediately.
