    Pasta with Zucchini and Fresh Tomatoes

    4 small zucchinis
    2 T. lemon juice
    3 garlic cloves, minced
    2 onions, thinly sliced crosswise, separated into rings
    1 T.white wine vinegar
    3 lg tomatoes, thinly sliced
    1/4 c fresh basil, minced
    1 T. fresh parsley, minced
    1/2 t red pepper flakes
    1 lb. ziti
    Halve each zucchini lengthwise; slice into 1/2" pieces.
    Place in a large bowl. Add the lemon juice and toss well. Set
    aside.
    In a large non-stick frying pan over medium-high heat, cook
    the garlic for 30 seconds, stirring constantly; don't let it
    burn. Add the onions, vinegar and zucchini. Cook for 3-4 min.
    Add the tomatoes, basil, parsley and pepper flakes. Cover the
    pan, reduce the heat; simmer until zucchini is tender, about
    5 -7 minutes.
    Meanwhile, cook the ziti in a large pot of boiling water
    until just tender, about 8 min. Drain; place in a large
    shallow bowl. Add the zucchini mixture and toss well. Makes 4
    servings.
