Spaghetti with Garlic and Oil
List of Ingredients
1 lb. Spaghetti, cooked
1/2 cup extra virgin olive oil
1/4 cup grated Parmesan cheese
1/4 cup fresh parsley, cut
2 garlic cloves, minced
salt/pepper
Using small skillet or saucepan, put olive oil, garlic, parsley and pepper. Cook over low flame until garlic is slightly brown, do not overcook. Remove from heat and pour over cooked spaghetti. Sprinkle with grated cheese. Add some spaghetti water, if pasta is dry. Serves 4.

Variation:
6 garlic cloves chopped
10 cups water
1 lb. linguine
In a pot big enough to cook pasta, add olive oil and garlic; simmer on low heat. Do not brown. Add water, salt pepper and fresh parsley and continue to simmer for 10 minutes. Bring water to boil and add linguine, cook 12 minutes, remove from heat. Let rest in pot for 10-15 minutes. (Do not drain pasta.) Using a pasta serving spoon, remove pasta to soup dish and pour 1/4 cup of garlic water over pasta. Top with Parmesan cheese. Serves 6 non-Italians.....3 Italians.
