    Christmas Pickles

    List of Ingredients




    Christmas Pickles
    2 gallons cucumber rings, peeled and seeded
    2 cups lime
    8 1/2 quarts water

    Mix and pour over rings. Let stand 24 hours. Drain and wash through several waters. Let stand in cold water for 3 hours. Drain. Cover with:

    1 cup vinegar
    1 small bottle red or green food coloring
    1 tablespoon Alum
    Add water to cover.

    Simmer for 3 hours and then drain.

    Syrup:
    4 cups vinegar
    5 ounce package red-hots
    8-10 sticks cinnamon
    15-18 cups sugar
    4 cups water or enough to allow syrup to cover rings.

    Bring to a boil and pour over rings. For 3 days, drain syrup into pan and bring to boiling. Pour over rings. On fourth day, pack rings in jars. Cover with boiling syrup. Seal jars and water bathe for 10 minutes.
