4 quarts sliced unpeeled medium pickling cucumbers
6 medium white onions sliced (equal to 6 cups)
2 green peppers sliced
1red pepper sliced
3 cloves of garlic
1/3 cup of pickling salt
cracked ice
5 cups of sugar
3 cups of white vinegar
2 tablespoons of mustard seed
1 1/2 teaspoons of ground turmeric
1 1/2 teraspoons of celery seed
Combine cucumbers, onions, green pepper, red pepper, garlic and salt. Cover with cracked ice.
Mix well and let stand 4-5 hours; drain well
Combine remaining ingredients; pour over cucumber mixture. Bring to boiling
Pack cucumbers and liquid into hot jars leaving 1/2 inch head space. Adjust lid.
Process in boiling water bath (half pints or pints) 15 minutes. Makes 8 pints
