Banana Cream Pie
List of Ingredients
1 (9 inch) pie shell, baked and cooled
3/4 cup sugar
1/3 cup all-purpose flour
1/4 tsp salt
2 cups milk
3 egg yolks, beaten
2 tblsp butter or margarine
1 1/4 tsp vanilla extract
3 to 4 bananas
Whipped cream for topping
Combine the sugar, flour and salt in a saucepan. Add milk slowly while stirring. Cook over medium heat, stirring constantly until mixture starts to boil.
Cook for 2 more minutes, stirring constantly. Remove from heat and stir a small amount of the hot mixture into the beaten egg yolks, then immediately add
the egg yolk mixture to the hot mixture and mix well. Return to heat and cook for 2 more minutes, stirring constantly. Remove from heat and add butter and
vanilla. Stir until completely smooth. Slice bananas into cooled baked pastry shell and top with pudding mixture.
Cool to room temperature and refrigerate until completely cold. Serve with whipped cream.
I change this recipe by slicing the bananas into the custard, mix well and pour into the baked pastry shell.
