    Mincemeat

    List of Ingredients

    The Yankee Cook Book
    recipe is from a Mrs Patt in Providence R.I.

    Mincemeat
    3 pounds lean beef, chopped fine
    1/4 c orange juice
    2 pounds suet, chopped fine
    4 cups sugar
    3 qts. apples finely chopped
    2 Tbsp salt
    3 pounds raisins, chopped
    1 cup coffee
    2 pounds currants
    2 cups cider
    1 pound citron, cut in small pieces
    1 tesp. cloves
    1/2 cup candied orange peel, chopped
    1 tesp. Allspice
    2 tesp cinnamon
    1/2 cup candied lemon peel, chopped
    3 cups brandy
    1/2 cup lemon juice
    1 cup sherry
    1 cup currant jelly


    mix all ingredients except brandy and sherry
    and cook 2 hours: when cool add liquor: let stand in a crock a week before
    using. This makes about 12 quarts and will keep indefinitely in a cool
    place.
    This recipe came from Maine and is very old.

    I might add that in a modern cookbook I have it suggested that a similar recipe to this one -- be
    sealed in jars and processed in a boiling water bath for 20 min.
    Suit is the hard fat from beef and you can ask a butcher for it.
