    White Pie

    List of Ingredients


    Torta Bianca
    1 1/2 cups sweet almonds - 1 1/2 cups sugar - 1 1/2 cups Sassolino - grated peel of 1
    lemon - 3 egg whites - sufficient dough to line a pie pan (see the recipe for Torta Nera) - 3 1/2 oz. cooking
    chocolate.

    Recipe

    Dip the almonds in boiling water, peel them, roast them for a few minutes in a hot oven and chop them in small
    pieces. Combine the pieces with the sugar and Sambuca liqueur. Grate the lemon peel and add it to the mixture.
    Beat the egg whites until they are stiff and fold them into the preparation. Cover the bowl with a towel and set aside.

    Preheat the oven to 390° F. Butter the pie pan and sprinkle the sides and bottom with flour. Shake out the excess.

    Line the pan with dough, making sure that it overlaps the rim. Grate the chocolate over the dough, then add the
    chocolate mixture to the pan. Fold back the dough to form a border. Bake the pie in a 390° F. oven for about 45 minutes. Allow the pie to cool before serving it
