Tomato Sauce for Pizza
great for pasta, hot sandwiches, stews and casseroles too.
Freeze for later. [if you are cooking for a long time do not add sugar]
Makes about 6 cups
List of Ingredients
- 1/4 cup [4 tbs] olive oil
- 2 cups chopped onion
- 2 cloves garlic
- 5 cups [two 28oz cans] Italian plum tomatoes, drained
- 1 tsp each of dried basil and dried tarragon
- 2 tsp dried oregano
- 2 tsp salt
- 1 tbs brown sugar
- 6 oz tomato paste [small can]
- pepper
Instructions
- Heat oil to hot. Add chopped onion and garlic and cook until transparent. Add tomatoes, chopping them with your spoon in the pan. Rub dried herbs between hands and drop into sauce [if using fresh adjust accordingly] Add salt, sugar, tomato paste and a few grindings black pepper.
- Stir all together and simmer gently for 40 minutes. Do not let boil!
- for smooth put in processor or electric blender after cooling. If you like chunky make sure pieces are not too large by chopping tomatoes with spoon as you stir sauce.
