3 tbs. butter or margarine
4 boneless chicken breasts pounded but not too thin
1 tsp. dried oregano or mix of oregano & basil (dried -
not fresh)
1/4 tsp. Pepper -no salt - ham adds enough
4 slices thinly sliced ham - (prosciutto or a nice honey
baked if you find prosciutto too salty - the key is thin slices)
4 slices provolone cheese - not too thin
1/4 to 1/2 cup dry white wine - you could substitute water
so I'm not really breaking the 5 ingredient rule.
In large skillet melt butter over medium heat. Add chicken breasts
and cook 3 minutes on each side. Season both sides with pepper and
oregano. Place a slice of ham and then a slice of cheese on each
breast. Drizzle wine all over. Cover and cook 5 minutes until cheese
is melted and chicken is cooked through.
Serve with crusty Italian or French bread and pasta tossed with
parsley and parmesan or Romano cheese. My mother served it with green
spinach pasta and loved it, but as I rarely like to have anything
green on my plate, I use regular pasta or a nice rice pilaf. Serves
four.
