    List of Ingredients




    Chicken in Soy Sauce

    1.5kg (about 3 pound) of chicken pieces (I like to
    use chicken thighs/drumsticks/wings)

    Marinade:
    1 teaspoon fresh ginger juice

    Seasoning:
    2 star aniseed
    1 piece cinnamon stick
    8 cloves
    3 tablespoon Chinese rice wine (can be substituted by sherry)
    600g light soy sauce
    1 tablespoon dark soy sauce
    150g sugar
    4 cups water

    Marinade the chicken with the ginger juice and rice wine for 2-3
    hours. Bring water to boil together with the spices (i.e star
    aniseeds, cinnamon stick and cloves). Add in the sugar, light and
    dark soy sauces. When it starts to boil again, add in the chicken
    pieces. After bringing to boil, lower the flame to the min. and
    simmer the chicken pieces until it is cooked (about 30-40 min) - Cover
    the pot to prevent the liquid from evaporating during cooking. When
    done, dish up, sprinkle with dash of sesame oil and serve. This
    should serve about 6 person

    Optional: Add / tofu (cut into 2-inch cubes) / shelled but whole hard
    boiled eggs towards the last 15-10 minutes of cooking for a more
    substantial dish

    If freezing, remove the spices and do not freeze with tofu.
