Chilli Chicken and Cashews
List of Ingredients
Chilli Chicken and Cashews (This feeds 5-6)
Salad (this makes a large one)
1/2 Iceberg lettuce, torn
2-3 Tomatoes, chopped roughly
2 large carrots grated
2-3 stalks celery, sliced not too thin
Big handful snow pea sprouts
5-6 mushrooms (optional) sliced
2 cups grated cheese (any type you like)
2 Avocados, chopped roughly
In a large wide bowl toss all ingredients except cheese & avocados.
Then sprinkle cheese and top with avocados.
Chicken
3 Chicken breasts or 4-5 thighs, chopped
2 handfuls cashews (not salted)
1-2 cups sweet chilli sauce (use an imported Thai one if possible)
1 tablespoon oil
In wok or fry pan, heat oil until very hot, add chilli sauce and stir
until very hot, add chicken and toss in sauce. When nearly cooked,
add cashews until hot and coated. Place in heated bowl.
Individually, place salad in your bowl, then put chicken on top. It's
absolutely yummo!
