    Mozzarella Chicken

    List of Ingredients




    4 boneless chicken breasts
    1 stick butter or margarine, divided
    1 (8-oz.) carton button mushrooms
    3 green onions
    1/4 - 1/2 tsp. salt
    1/4 - 1/2 tsp. pepper
    4 slices mozzarella cheese

    Recipe




    Melt 1/2 stick margarine or butter in large skillet over medium heat. Add chicken breasts. Sautee for about 10 minutes, until nicely-browned and cooked about halfway through.

    While chicken cooks, clean and slice mushrooms and onions.

    When ready, flip chicken breasts and sprinkle with salt and pepper to taste. Depending on how much butter remains (and how fat-conscious you are!), add enough of the remainder of the stick to sautee vegetables. Add mushrooms and onion, cooking approximately 10 more minutes, until veggies are tender and chicken is done.

    Remove chicken to a platter. Top each breast with a slice of mozzarella cheese and then spoon the mushroom/onion mixture over all. Cover with foil and put it under the broiler for a minute or two until cheese melts.
