Pennsylvania Dutch Oven Stuffer
1 fresh whole roaster ( 6-8 lbs.)
2-3 Tbs. German or Dijon style coarse-grain mustard
salt & ground pepper to taste
1 small apple, cored & cut into quarters
1 small onion, peeled & cut into quarters
Preheat oven to 350 degrees. Remove giblets & pat chicken dry; rub inside &
out with mustard & season with salt & pepper. Place apple & onion inside
cavity. Place roaster, breast-side up, in a shallow roasting pan in the oven.
Cook 2-2 & 1/2 hrs.
or until juices run clear, not pink, when thigh is pierced. A meat thermometer
inserted in thickest part of thigh should register 180 degrees. Remove and
carve.
Makes 3 meals of 4 servings each. Prep. time: 5 min.
