Rosemary & Garlic Scented Chicken

Rosemary & Garlic Scented Chicken
2 split chicken breasts (skin must be on and they
have to still have the bones)
2-6 garlic cloves roughly chopped (vary by size and
preference)
3-4 sprigs fresh rosemary coarsely chopped
Olive Oil (enough to coat well)
Potatoes (as many as you think you will need, I prefer
Yukon Golds) quartered
Salt (Kosher if possible, better control over salinity)
Pepper (freshly cracked)
Preheat oven to 500 degrees (yes, 500!) Wash and quarter potatoes.
Rinse chicken breasts. Combine the salt, pepper, rosemary and garlic
and divide in half. In a baking dish place chicken breasts bones down
and coat with olive oil and one half of the rosemary mixture. In a
another bowl, toss potatoes with oil and remaining mixture. Arrange
potato quarters around the chicken. Cook for 20-25 minutes (check
after 20 minutes)
