    azel Creek Ham Hocks with Cornmeal Dumplings

    Ham hocks
    Water to cover

    Dumpling Mix
    2 cups self-rising flour
    1/4 cup ham hock liquid
    A pinch of baking soda
    1/4 cup buttermilk
    1 tbsp. grease

    Wash and cover ham hocks with water in a large stew pot. Cook until well
    done. Remove hocks from juice but keep the broth hot. In a separate
    container, form the dumplings into soft balls. Bring the ham hock juice to a
    boil and add water if needed to cook dumplings. Bring to hard boil, Reduce
    heat to med., cover and cook for 15 min. or until done.
