Extra Fancy Mashed Potatoes

This wonderful variation for the mashed potatoes in MOSCOW BEEF STROGANOFF. Simply substitute this recipe for the potato preparation instructions in the stroganoff recipe on the preceding page. Or try them by themselves as a side dish whenever "Extra Fancy" Mashed Idaho Potatoes are desired.

Ingredients:

3 cups water
1 teaspoon salt
1/2 cup butter
1 cup milk
4 cups Instant Mashed Idaho Potatoes (dry flakes)
1 cup heavy cream or undiluted evaporated milk
4 eggs, beaten
Directions:

In a large saucepan bring water, salt and butter to boil. Remove from heat; add milk. Gently stir in potato flakes. Add cream and eggs; mix well.
