    210's Pork Tenderloin With Sweet Potato

    List of Ingredients




    Serves: 6

    6 12-14 oz Pork Tenderloin
    4 Medium Sweet Potatoes, peeled and sliced
    1 Medium Onions, julienned, caramelize
    1 Egg
    1 C Heavy Cream
    1 C Grana Padano Cheese, grated
    1 1/2 lb Baby Vegetables, lightly blanched
    12 oz Blackberries, frozen
    2/3 C Sugar
    1 C Red Wine
    1 C Red Wine Vinegar
    1/2 C Bread Crumbs
    3 T Butter
    Salt To Taste
    Pepper To Taste

    Recipe



    Method For Sweet Potato Gratin:

    · Line a 4 1/2" x 9" baking pan with parchment paper.
    · Combine egg and heavy cream and whisk thoroughly.
    · Layer 1/4 sweet potato slices with edges overlapping in bottom of the pan and season lightly with salt and pepper.
    · Distribute evenly 1/4 of caramelized onion and 1/4 of cheese over the sweet potatoes.
    · Drizzle 1/4 cream mixture evenly over other ingredients.
    · Repeat steps 3-5 three more times.
    · Top with bread crumbs and bake covered at 325 degrees for 40-45 minutes (fork tender).
    · Uncover and bake 10 minutes more.
    · When cooled completely, turn out onto cutting board and cut into 1/6 portions.
    · Place portioned gratins upright on greased cookie sheet and set aside.

    For Blackberry Gastrique:

    · Combine blackberries, sugar, red wine vinegar in a medium saucepan.
    · Place over medium-low heat and simmer until berries start to break apart (about 45 minutes).
