Beach Walk Pecan Pie
List of Ingredients
Serves 8
1 cup light corn syrup
1 stick butter, melted
1 cup of sugar
3 large eggs, beaten
1 teaspoon lemon juice
1 teaspoon vanilla
1 pinch salt
1 1/4 cup pecans, chopped
Crust ingredients
4 cups white flour
2 eggs
2 egg yolks
2/3 cup sugar
1 pound butter, chipped
1/3 teaspoon salt
Recipe
Crust: Blend all of the ingredients (listed under Crust ingredients) together. Mix by hand until
all of the butter is incorporated and the dough is smooth. Roll the dough until the desired
thickness is achieved. Roll the dough onto the rolling pin and unroll over a 12 inch tart pan.
Press the dough into the tart pan and cut the excess dough off the edges. Chill. Preheat an
oven at 375 degrees.
Pie Filling: Blend all of the ingredients (listed ABOVE crust ingredients) in a mixing bowl.
Pour the mixture into the chilled pie shell. Transfer the pie to the oven and bake for 25
minutes. Remove the pie from the oven and let stand 15 minutes before slicing to serve.
