    Canadian Cheese Soup

    List of Ingredients




    Canadian Cheese Soup
    (Martin's Restaurant, Lampasas)

    1/4 cup butter
    1/2 cup finely diced or grated onion
    1/2 cup finely diced or grated carrots
    1/2 cup finely diced or grated celery
    1/4 cup flour
    1 1/2 tablespoon cornstarch
    1 quart chicken stock
    2 cups cheese sauce
    1/8 teaspoon baking soda
    1 cup evaporated milk
    salt, pepper, parsley

    Melt butter in a large sauce pan. Add onions, carrots, and celery; saute
    until soft. Add flour and cornstarch and cook until bubbly. Add stock
    slowly to make smooth sauce. Add cheese sauce and baking soda, stirring
    gently. Add milk and seasonings to taste. Serves 8.
