    Dungeness Lodge Raspberry Crepe Delight

    List of Ingredients




    Raspberry sauce
    3 cups fresh raspberries
    1/2 cup sugar
    Put berries and sugar in medium saucepan. Bring to a boil, then turn heat to warm while you prepare the crepes.

    Crepes:
    2 beaten eggs
    1 1/2 cups milk
    1 cup all-purpose flour
    1 tablespoon cooking oil
    1/4 teaspoon vanilla (optional)
    1/4 teaspoon salt

    Recipe



    Combine eggs, flour, oil and salt. Beat till well mixed, then add vanilla.
    Heat a lightly greased 6-inch skillet; remove from heat. Spoon two tablespoons of batter into the pan. Lift and tilt skillet to spread batter evenly over the bottom of the pan. Return to heat. Brown one side only. Invert over paper towels to remove crepe from pan. Repeat with remaining batter, greasing the skillet occasionally. Makes about 15 crepes. Put crepes on a plate, pour raspberry sauce over them and sprinkle with powdered sugar.
